ALAQUÀS .- Población muy cercana a Valencia, se halla a 7 Km. de la capital, tiene una extensión de 6 Km2. y una población de unos 30.000 habitantes. Está enclavada en plena Huerta Sur de Valencia, en "Pla de Quart" y se cultivan productos hortofrutícolas, patatas, leguminosas y sobre todo frutas y hortalizas. Hay que destacar la gran calidad de las naranjas de Alaquàs. La mayor parte de su termino es de regadío, suministrado por la Acequia de Manises

Sus monumentos más emblemáticos son: el castillo-palacio que data de 1582, de estilo gótico y que es Monumento Nacional; la Iglesia de Nuestra Señora (conserva nueve tablas que pintó Cristóbal Llorenç) y la Iglesia de la "Mare de Déu del Olivar".

De clima mediterráneo, sus veranos cálidos y los inviernos suaves, su temperatura media es de 17º.

Alaquàs sobresale por el carácter alegre y hospitalario de sus gentes, su mejor exponente son sus celebres "Festes Majors", que tienen lugar hacia finales de Agosto y principios de Septiembre. Fiestas de tradición y cultura, tales como "Els Moros i Cristians", "Santa Creu, "El Crist de la Bona Mort", la "Mare de Déu dels Dolors" "La Mare de Déu de l´Assumpció" etc.

Aunque se trata de una fiesta tradicional de Elche ha cogido tanto raigambre y tradición popular en Alaquàs que la hace perfectamente diferenciadora.

Sus principios e historia es reciente, se remonta a 1979 cuando Pep y Maria Ferrer que iban cada año a Muro d´Alcoi a participar en aquellas fiestas invitados por unos amigos organizaron una excursión colectiva, formada por varios vecinos de Alaquàs. Les encantó tanto aquella fiesta, se lo pasaron tan bien, que al llegar decidieron importar esta Fiesta. La primera desfilada fue en 7 de Septiembre de 1979 y así nació "Els Moros i Cristians Perolers".

Está formada por distintas agrupaciones y cada año componen una comparsa, a estas agrupaciones de les denomina "filà" , el colofón es la desfilada el día de la Fiesta, al son de tambores y timbales a lo largo del "Carrer Major"

Las "Filades" disponen de sus sedes sociales denominadas Cabildos, y es algo mucho más que la "Fiesta de Moros i Cristians" es un concepto, una forma familiar de vivir la amistad. En los Cabildos se reúnen a lo largo del año las diferentes familias y allí disfrutan de sus celebraciones, de sus fiestas gastronómicas, de la buena vecindad.

Las Filades que actualmente están constituidas en Alaquàs son: AL-AZRAQ - ALCASSÀBARS - ALMOGÀVERS - EL COBERTÍS - EL CRESOL - LA HAIMA - LA LLUNA - ELS OLLERS - EL PENÓ DE LA CONQUESTA - RIALLA - SANGONERETA i TUAREG.

La fiesta por excelencis es la Fiesta a su Patrona "La Verge del Olivar", que se celebra en la primera semana del mes de Septiembre. Los dias 8 y 9 son "Les Festes Majors", es decir el dia 8 se celebra la Fiesta a la "Mare de Déu del Olivar" y el dia 9 se celebra el "Dia del Santíssim Crist".

El resto de los demás dias aunque se celebran fiestas de menor importancia no por esto dejan de tener un gran arraigo popular. Destacamos la "Festa de Sant Miquel", "La Verge dels Dolors", etc) a excepción de la famosa Fiesta de "Moros i Cristians" que se celebra el 6 de Septiembre. Se puede decir pues que concurre a principios de Septiembre todas las Fiestas Grandes de Alaquas.

En cuanto a la "Festa de Moros i Cristians" hay que comentar que para poder llevarse a cabo, salen las "colles" de chicos y chicas ("Clavaris de la Festa"), trabajando todo el año para poder obtener recursos económicos.

En todas las fiestas de Alaquàs está omnipresente la "pólvora", llegando a contratar los servicios pirotécnicos de prestigio tales como los de "Broncho i Caballer" y otros. Y los actos que revisten la grandiosidad de la Fiesta, que hacen vibrar en todo el sentido de la palabra son las grandiosas "Mascletades" (tracas con cañones de pólvora), éstas disparan gran cantidad de pólvora con enorme estruendo, estruendo que llega a ser incluso armónico.

También la famosa "Corda" que cosiste en que cada "Clavari" (se reunen grupos de hasta 30) en la Fiesta del Santísimo Cristo, portan un cajón de madera cada "Clavari" lleno de cohetes (borratxos), se situan en un punto estratégico de la Calle Mayor y van disparando estos cohetes, van muy bien equipados para evitar algún accidente y la cantidad que se dispara de cohetes va en función de los recursos económicos que hayan podido obtener, pero la media que dispara cada "Clavari" suele ser de 200 a 300 docenas de cohetes, contituyendo una auténtica apoteosis. Este acto de la "Corda" se celebra al acabar la Fiesta de "La Mare de Déu del Olivar", como Fin de Fiesta y suele ser a la madrugada del dia 9 enlazando ya con la Fiesta del Santísimo Cristo.

Otro acto también singular es el llamado "Cant de la Carxofa". Al terminar la Procesión de la "Verge del Olivar" y la del "Sant Crist", detienen un instante el paso de la Imágen y un joven realiza un cántico, cántico cuyos orígenes son antiquísimos, a este canto se le llama de la "Carxofa" y sola se realiza en dos o tres poblaciones del "Païs Valencià".

Alaquàs antiguamente vivía de la agricultura (cultivos) y de una incipiente industria manufacturera (castañuelas, ruedas de carro i alfarería. Se confeccionaban cazuelas y perolas de fango, de ahí viene el nombre de "Moros Perolers"...tambien se fabricaban fichas de dominó). A partir de los años 60 se desarrolla una indústria en torno a la madera (muebles), indústria que hoy es muy importante en Alaquàs, que cuenta con un Polígono Industrial que aglutina la mayoría de industrias. Si a todo esto añadimos que Alaquàs se haya situada solo a 8 kms. de Valencia se podrá apreciar la situación estratégica y previlegiada de la población. Población, por otro parte que nunca se podrá decir de ella que forma parte de la periferia de Valencia al tratarse de una población con unas tradiciones y una identidad muy marcada y plenamente diferenciadora de la gran ciudad.

Ingredients: 3 kgs. De fideus grossos; 4 conills tendres; 2 Kgs. d´anguiles;4 kgs. carxofes; 4 cebes; 800 g. de tomàquet triturat; 4 cabeces d´alls; Julivert; 1 cullerada petita de pebre roig; 300 g. d´oli; 2 llimes; Tifell paella.

. Retallar les fulles exteriors de les carxofes i tallar-les a gallons.
. Poseu-les en aigua i escorregueu la llima perquè no facin negres.
. Rossegeu el conill.
. Netegeu i trossegeu les anguiles.
. Sofregiu el conill en una paella fins enrossir-lo
. Afegiu a continuació la ceba trossejada i 2 cabeces d´alls tallats a trossets,
la carxofa i la tomata, amb el pebre roig fins que estigui sofregit.
. Després poseu aigua i que bulli durant 20 minuts a foc viu.
. Rectificar de sal i colorant al gust.
. Afegiu les anguiles i a continuació els fideus
. Abans que el brou es quedi sec, piqueu en un morter 2 cabeces d´alls i
julivert, amb una mica de brou de la paella, remeneu i repartiu per damunt
dels fideus.
. Espereu que els fideus es quedin secs

Ingredients.- Plantilla: 120 g. de sucre; 50 g. de farina; 4 ous
Crema Pastissera: 150 g de sucre; 75 G. de farina d´arròs; ½ l. de llet; 2 ous (menys 1 clara); 1 rama de canyella, 1 corfa de llima.

Plantilla:
. Preparar el motlle amb un paper d´estrass.
. Batre les clares a punt de neu.
. Afegir sucre, sense deixar de batre-ho
. Afegir el rovells dels ous i la farina
. Coure al forn al voltant de 15 minuts a 200º

. Posar la llet a escalfar amb la rama de canyella i la corfa de llima.
. Batre el sucre, la crema d´arròs, els dos ous(menys una clara) amb
poca quantitat de llet.
. Una vegada tot batut afegir-ho a la llet sense deixar de moure-ho fins
que es torni espès.

Preparació final:

. Damunt de la plantilla repartir la crema i enrotllar-la.
. Afegir per damunt sucre i cremar-lo amb un aparell metàl·lic escalfat.
. També podem omplir-lo de cabell d´àngel, trufa o nata.

Salsa Nogat: composada de: 3 kgs. de tomàquet triturat; 150 g. d´ametlles; 150 g. de pinyonets; pebre roig; 1 pebrera i sal al gust; alls.
Tot ben triturat.

2 conills trossejats; 2 pollastres trossejats; 4 kgs. de creïlles pelades i trossejades; 2 kgs. d´anguiles trossejades; 2 dotzenes de caragols; 2 dotzenes d´ous. Tifell paella.

1.Sofregir la carn.
2.Sofregir les creïlles
3.Sofregir la salsa
4.Afegir aigua fins a cobrir la carn, bullir durant vint minuts.
5.Posar les anguiles, deixar bullir quinze minuts més.
6.En els darrers cinc minuts deixar coure els ous, sal i colorant al gust.

Ingredients
375 g. de sucre; 375 g. d´ametlla molguda; 7 ous; 1 llima; sucre d´encaro; mantega i farina.

Elaboració:
. Preparar un motlle untant-lo de mantega i espolsant-lo de farina.
. Ratllar la corfa de la llima.
. Batre els ous fins a obtenir una textura escumosa.
. Afegir el sucre, sense deixar de batre-ho.
. Afegir l´ametlla i la ratlladura de la llima.
. Coure al forn al voltant d´una mitja hora a 180º.
. Una vegada cuit i ja fred, espolsar per damunt el sucre d´enncaro.
